Ligurian cuisine is truly a triumph of the Mediterranean way of eating: plenty of vegetables and aromatic herbs, many kinds of pasta and, above all, the mild and unique aroma of olive oil. The first courses are impressive: ravioli (stuffed pasta served with a sauce of meat or of wild mushrooms); pansotti (fresh pasta with a stuffing made of Ligurian herbs and topped with nut sauce); trenette (ribbon-like noodles); trofiette (fresh pasta made of wheat and chestnut flour); testaroli (a speciality of the easternmost Liguria), all sauced with pesto (a basil sauce that is the gastronomic symbol of Genoa: Genoese basil is the only one that has the “right” taste). Ligurians too have their pizzas: the sardeinara made in the West Riviera, the focaccia col formaggio, a famous speciality of Recco and the farinata (a thin baked tart made of chickpea flour). Really characteristic is the focaccia, an unique kind of flat bread (other varieties are with onions, sage, crushed olives). Greens are concocted in thousand ways: try torta pasqualina (a tart made of chards or artichokes); polpettone (a timbale of potatoes and string beans), the stuffed vegetables and the wild mushrooms with potatoes. If you like seafood, you can have whitebait, fried or boiled, octopus salad, stuffed or fried anchovies, anchovies tart, buridda (fish soup) or the expensive and imposing salad called capon magro (made with various boiled fishes, shellfish and vegetables seasoned with a green sauce). Meat dishes are less frequent but truly special: cima (a “pocket” of veal meat stuffed with meat, eggs, cheese and vegetables); tomaxelle (small roulades) and carne all’uccelletto (tiny pieces of veal seasoned with laurel).
While travelling in Liguria, you’ll be pleasantly surprised as almost every place boasts of its own speciality. Our advice; just try it!
